Eggless Raisins Cupcakes
After all the talk about wanting to bake some cake for Leroy, I finally got down to baking some eggless cupcakes for Leroy last night.
They turned out tasting like normal cupcakes. I really have to thank my auntie for her formula :) I am really so happy that Leroy can finally get to taste cakes.
And of course, Leroy and Renee had cupcakes for breakfast this morning!

Afternoon @ Downtown East

Renee & Leroy had so much fun today @ Downtown East. Amanda, Isaac, Ben, Sharon and Ashley all went together.The sky was overcast and the moment we parked the car, we saw the lightning strike right ahead of us. But thank goodness, it did not rain and the kids were able to play. But not for very long as the wind was pretty cooling and I was worried the kids will catch a cold.
Leroy went with Eugene to the big slides but Renee did not dare try it. She just wanted to play in the kids area. I tried to capture the moment but i was too slow :( I will try again on their next trip there.
Bread Making Class Day 4
Today's class will be the last for this month and we will continue with the class again when the 2 men are available to fly back sometime end of June.We made so many Danish pastries, strudels, chicken pies and curry puffs to feed an entire village today. Preparing the crust for Danish Pastries is a really tough process. Now that I learnt how to do it, I can understand why these pastries and strudels are more expensive.
Breadmaking Class Day 3
Today we learnt how to make dougnuts and fried bread. In total, we made about 200 over doughnuts and fried bread!We had chicken curry, char siew, sweet bean paste, sausages, crab stick for the fried bread filling. For doughnuts, we had toppings of peanuts, chocolate, oreos, blueberry, cocoa , chocolate sprinkles, icing sugar etc ...
Once again, we had lots of fun. It was pretty stressful as well as we had so many different fillings to complete for the fried bread. It was most fun when it came to decorating the doughnuts.
As you can see, I made one specially for Renee.
Bread Making Class Day 2

Early this week, I have been busy attending baking classes with Eugene and Jonathan. It was really a very fulfilling and tiring week. Thank goodness we all had each other for company. We were all so caught up with the basics on the 1st day that we forgot to take pictures.
These are some of the pictures from the 2nd day of class. We did some bread with toppings and also wholemeal bread and loaf. I requested for eggless so that I could let Leroy eat them.
Surprisingly, the breadless bread was so soft..alot softer than the ones I buy outside. I am really glad I learnt how to make eggless loaves for Leroy.

Inari
When I was downloading the pictures , I realised that i missed out this Inari Bento that I prepared few weeks ago for Renee. It's plain Inari with fried fishcake, some cherry tomatoes and grapes.

Hello Kitty and Family
Today's Bento are mini sandwiches comprising of Hello Kitty and my family :) It should be Papa, Mummy, Renee and Leroy.
The spreads includes Kaya, Nutella, Blueberry jam and Cheese. Scattered around the sandwiches are some Gerber Stars. I hope Renee will enjoy her lunch today.
Will be heading to the gym after this and hope to bake some Pandan Chiffon cake later.
